Cooking Ingredients for Mushroom Risotto 2 Recipe

2 tb Butter
2 tb Olive oil
4 tb Onion; chopped
1/4 lb Mushrooms; chopped
1 c Arborio rice
3 c Chicken or vegetable broth
Salt to taste
Parmesan cheese

Mushroom Risotto 2 Preparation

Place butter and oil in microwaveable casserole with cover. Microwave on HIGH for 30 seconds. Add onions and mushrooms. Stir to coat; microwave on HIGH for 4 minutes. Stir in rice; cook on HIGH 3 minutes. Stir in broth; cook on HIGH 9 minutes. Stir again and cook 9 more minutes. Add salt to taste. Serve with grated parmesan cheese. Serves 4.
