2-3/4 oz Raspberry puree
2-1/2 oz Strawberry puree
3-1/4 oz Sugar
1/4 Vanilla bean
1/4 Cinnamon stick
1/4 Bay leaf
3 Peppercorns
4 oz Water
1/4 Orange zest
1 pt Fresh berries

Red Wine Plum Stew with Spiced Ice Cream Preparation

Cook the berry purees, sugar, wine, water and spices together until it boils and then skim. Cook the juice until desired thickness (lightly syrupy). Add the plums to the cooking juice and poach. Let set overnight, well covered.
