Cooking Ingredients for Main Dish Vegetable Omelette Recipe

1/3 c Butter or margarine
1/2 c Onion; chopped
1/2 c Peas; fresh or frozen
1/2 c Green pepper; chopped
1/2 c Celery; chopped
2 tb Parsley; chopped
5 Whole eggs; beaten
1/2 ts Salt
1/4 ts Pepper
2 c Mashed potatoes

Main Dish Vegetable Omelette Preparation

Place butter, onions, peas, green pepper, celery and parsley in a 2 quart casserole. Cover. Microwave at high (100%) until tender crisp, 3 to 4 minutes. Stir eggs into potatoes. Stir in salt and pepper. Add potato mixture to vegetables. Mix well. Cover with wax paper. Microwave at medium high (70%) until almost set, 8 to 10 minutes. Let stand 3 to 4 minutes.
