1 lb Mushrooms
1 Red onion
1 Yellow onion
3 tb Vegetable oil
1 tb Margarine
2 Garlic cloves

Chop the mushrooms, tomatoes, scallions, garlic and onions, and saute‚in margarine. Season the vegetables only from the top. While they are sauteing, heat the oil in a shallow pan and cook the chicken, uncovered, for about 25 minutes.
