2 md Bananas; peel, slice
8 oz Lemon low-fat yogurt
2 tb Sugar
2 ts Lemon juice
Lettuce leaves
8 c Cut-up fruit such as:
-papaya; banana,
-strawberries star fruit,
-cantaloupe honeydew, mango,
-kiwi fruit and/or
-blueberries

Sun Fruit Salad with Banana Dressing Preparation

For Dressing: In a blender or food processor, combine sliced bananas, lemon yogurt, sugar and lemon juice; cover and blend for 15 to 20 seconds or until smooth. Chill dressing, covered, for up to two hours. To serve, line salad plates with lettuce; arrange fruit on top. Top with dressing. Sprinkle with walnuts.
