Pre-heat the oven to 190C. Boil the potatoes whole, then cut into wedges about 1 inch thick. Place the wedges on a baking tray, season with salt and pepper and pour half the oil over them. Giuliano Gasali of the Grand Formosa Regent Hotel Taipei. Saute onion, add fresh mussels, add wine, put lid on pot. Boil for 5 mins or till the mussels open up. If raw mussels are used open with a knife. Mix breadcrumbs, garlic, parsley, olive oil and butter. Leave the mussels in the shell. Top with mixture on each shell. RINSE THE BEANS, then soak them overnight in enough water to cover them by 1 inch. Put the beans, the soaking liquid, the ham hocks and 3 cups of water into a stock pot. Cover, bring to a boil, and simmer until the beans are just tender, about 1 hour. Remove the ham hocks and let them cool. Add the onions and garlic to the pot and simmer for 10 minutes. Slice the meat off the ham hocks and add to the pot. Add the rice and simmer until the rice is tender and the water is absorbed (it may be necessary to add more water). Melt the chocolate in a bowl over some barely simmering water. When it has melted, whisk in the milk until smooth and leave to cool. Whisk the egg whites with the lemon juice until stiff and very gently fold into the chocolate mixture. Whisk the double cream until it forms soft peaks and fold into the chocolate mixture.
